We love an easy recipe and the Easy 2 Ingredient Healthy Foil Pocket Chicken Breast is just that.

Honestly, we had chicken breast to use up and I didn’t have any lemons to make the lemon chicken breast recipe I had saved from another website so I decided to just wing it.

For this recipe I used 2 boneless skinless chicken breast halves. We buy all our boneless skinless chicken breasts from Zaycon Fresh; we love the quality and the value Zaycon Fresh chicken provides for our family.

Healthy Foil Pocket Chicken

2 boneless skinless chicken breast halves; cut into 2 or 3 pieces and hammered thin

Italian salad dressing

Directions:

Lay 1 of the pieces of chicken breast on a square of aluminum foil. Slather on a thick layer of Italian salad dressing on the chicken breast.

If you want, add in raw vegetables to cook alongside the chicken. We used asparagus but you could use broccoli, carrots, cauliflower,  zucchini, green beans, etc.

Put a thin tiny pad of margerine or a tiny dallop of butter on the veggies.

Fold the aluminum foil into a pocket, sealing the top and the two sides. I tucked the sides up slightly so the juices from cooking would not leak out.

Place the foil pockets onto a large cookie sheet and bake at 375 for 30 minutes.

When you open the foil pockets, do it carefully as there is a bunch of steam trapped inside.

We served our chicken breast with rice and it was a delicious, healthy and easy meal.
