One of the best gifts we received this holiday was an electric pressure cooker from Kelli’s parents.  We were clueless about pressure cooking, so luckily there was a cookbook included as part of the gift.  We’ve been experimenting with different recipes but one of our all time favorites has become barbecue ribs.  They are so easy to make!

Here is our Easy 2 Ingredient Pressure Cooker Ribs recipe:

1 rack of baby back ribs (you could also use country style ribs if you prefer)

1 1/2 cups barbecue sauce

Directions:

Cut the slab of ribs into sections, we always cut it into 4 sections.

In the pressure cooker, use the browning setting and brown each piece for 2 1/2 minutes per side.

Remove from the pressure cooker.

Mix 1 cup barbecue sauce with 1 cup water.

Place the ribs back in the pressure cooker and pour this sauce over the ribs.

Close the lid and cook for 30 minutes on high setting.

When finished, release the steam (or you could let it do the natural release).

In a baking sheet lined with aluminum foil (for easy clean up), lay the cooked rib sections flat.

Cover them with additional barbecue sauce and cook for 15 minutes at 350 degrees.  This step allows the sauce to get sticky and really finishes off the ribs.

When the 15 minutes is up, you are finished.  Enjoy!

If you are looking for a pressure cooker, the one that we use is the Cooks Essentials pressure cooker.
