Easy Tortellini, Chicken & Spinach Crock Pot Thick Soup Recipe

We tried a new recipe last night and it was so easy in the crock pot. It was delicious too!

Easy and delicious? We’ve got to share with you how simple this was to make.

Easy Tortellini, Chicken & Spinach Crock Pot Thick Soup

You will need:

1 large onion, diced

2 teaspoons minced garlic

1 small can tomato paste

1/3 cup flour

3 tablespoons olive oil

4 chicken bouillon cubes dissolved in 4 cups water (could use stock or broth if you wish)

2 cans diced tomatoes

1 large chicken breast cut in 3

1 bag frozen tortellini (about 4 cups – we used spinach tortellini but any variety would work

1 box frozen chopped spinach, thawed and drained

1/2 cup grated Parmesan cheese

1 cup whole milk

Salt and pepper

Directions:

In a microwave safe small bowl, add the diced onion, garlic, tomato paste, flour and olive oil. Heat on high for 1 minute, remove and stir. Cook for another minute and remove and stir. Do this a total of 5 times (so it cooks for a total of 5 minutes).

Pour onion mixture into the crock pot. Add the water/chicken bouillon liquid, the diced tomatoes, chicken breast, salt and pepper.

Cook on high for 4 hours.

Remove the chicken using a slotted spoon and shred it on a plate. Once you have it all shredded, put it back into the crock pot.

Add the frozen tortellini, the drained spinach (use your fingers to separate it as you put it in the pot). Add the parmeasan cheese and the milk (put the milk in the microwave for 30 seconds to take the chill off prior to putting it in the crock pot).

Cook for an additional 20 minutes on high.

That is all there is to it – and it is delicious!
